Spinach, tomato & feta omelette
Cook the vegetables first, move them out of the pan, then fold them back into softly set eggs with feta and herbs. That keeps the omelette from becoming watery.
Ingredients
- 4 large eggs
- 2 tbsp water
- 1 tsp olive oil
- 80 g baby spinach
- 120 g cherry tomatoes, halved
- 40 g feta, crumbled
- 1 tbsp chopped flat-leaf parsley or dill
- To taste freshly ground black pepper
- Optional 1 tsp finely grated lemon zest

Whisk the eggs with the water and black pepper until combined. Have the spinach, tomatoes, feta and herbs ready beside the hob.

Warm the olive oil in a non-stick frying pan over medium heat. Add the tomatoes for 1 minute, then add the spinach and cook for another 1–2 minutes until just wilted. Transfer the vegetables to a plate.

Reduce the heat to medium-low and pour the eggs into the pan. As the edges set, gently draw them toward the centre with a spatula so uncooked egg can flow underneath. Cook for 2–3 minutes until almost set.

Spoon the spinach and tomatoes over one half, scatter over the feta and herbs, then fold the omelette over. Cook for 1–2 minutes more until the egg is set throughout. Finish with lemon zest if using and serve straight away.
