Vegetable tofu scramble on wholegrain toast
This quantity makes two breakfasts. Keep the tofu in rough pieces rather than crushing it to a paste, and cook the vegetables first so the finished scramble stays colourful rather than watery.
Ingredients
- 250 g firm tofu, drained
- 1 tsp olive oil
- ½ red pepper, diced
- 100 g mushrooms, sliced
- 60 g baby spinach
- 6 cherry tomatoes, halved
- ½ tsp ground turmeric
- ½ tsp smoked paprika
- 1 tsp lemon juice
- To taste freshly ground black pepper
- 4 slices wholegrain bread

Pat the tofu dry with clean kitchen paper, then crumble it into rough bite-size pieces with your fingers or a fork.

Heat the olive oil in a non-stick frying pan over medium heat. Cook the pepper and mushrooms for 4–5 minutes until softened and lightly coloured.

Add the crumbled tofu, turmeric and smoked paprika. Cook for 3–4 minutes, stirring gently, then fold in the spinach and cherry tomatoes until the spinach wilts and the tomatoes warm through.

Toast the wholegrain bread. Finish the scramble with lemon juice and black pepper, then divide between two plates and serve with the toast.
