Why this combination

A plant-based savoury breakfast with vegetables built in

Current MASLD guidance focuses on the quality of the whole eating pattern rather than on a disease-specific breakfast. A Mediterranean-style direction emphasises minimally processed plant foods and vegetables while reducing heavily processed foods and sugar-sweetened drinks.

Tofu gives this breakfast a plant-based protein option, wholegrain toast provides a higher-fibre carbohydrate base, and the pepper, mushrooms, spinach and tomatoes make vegetables part of the meal rather than an afterthought. Tofu scramble with tomatoes on toast is also an established breakfast format in current UK recipe results, so this is a useful everyday dish rather than an invented “liver recipe”.

The complete recipe

Vegetable tofu scramble on wholegrain toast

This quantity makes two breakfasts. Keep the tofu in rough pieces rather than crushing it to a paste, and cook the vegetables first so the finished scramble stays colourful rather than watery.

Ingredients

  • 250 g firm tofu, drained
  • 1 tsp olive oil
  • ½ red pepper, diced
  • 100 g mushrooms, sliced
  • 60 g baby spinach
  • 6 cherry tomatoes, halved
  • ½ tsp ground turmeric
  • ½ tsp smoked paprika
  • 1 tsp lemon juice
  • To taste freshly ground black pepper
  • 4 slices wholegrain bread

Method

    Pat the tofu dry with clean kitchen paper, then crumble it into rough bite-size pieces with your fingers or a fork.

    Heat the olive oil in a non-stick frying pan over medium heat. Cook the pepper and mushrooms for 4–5 minutes until softened and lightly coloured.

    Add the crumbled tofu, turmeric and smoked paprika. Cook for 3–4 minutes, stirring gently, then fold in the spinach and cherry tomatoes until the spinach wilts and the tomatoes warm through.

    Toast the wholegrain bread. Finish the scramble with lemon juice and black pepper, then divide between two plates and serve with the toast.

Texture tip: If your tofu releases a lot of water, give it a few extra minutes in the pan before adding the spinach. That keeps the scramble from becoming soupy without needing extra oil.

Keep the scramble base, change the character

The recipe is intentionally flexible so it can absorb leftover vegetables and different breakfast preferences without becoming a separate thin page each time.

Add cumin and chopped coriander, then serve with tomato salsa and wholegrain toast.

Double the mushrooms, skip the pepper and finish with parsley, chives or thyme.

Add a few spoonfuls of drained beans near the end and serve with extra spinach or kale.
