Lemon-herb salmon traybake
The potatoes get a head start, then the vegetables and salmon join the same tray. It is designed for two people with minimal washing up.
Ingredients
- 300 g baby potatoes, halved
- 200 g broccoli florets
- 180 g cherry tomatoes
- 2 salmon fillets, about 130–150 g each
- 1 tbsp olive oil
- 1 lemon
- 1 clove garlic, finely grated or crushed
- 1 tsp dried oregano
- To taste freshly ground black pepper

Heat the oven to 200°C fan / 220°C conventional. Put the halved potatoes on a large lined roasting tray, toss with half the olive oil and half the oregano, then roast for 20 minutes.

Add the broccoli and cherry tomatoes. Toss gently with the potatoes and roast for another 8 minutes.

Mix the remaining olive oil with the garlic, remaining oregano, finely grated zest from half the lemon and black pepper. Place the salmon among the vegetables and spoon the lemon-herb mixture over the fish.

Roast for 12–15 minutes more, or until the salmon is cooked through and flakes easily and the potatoes are tender. Serve with lemon wedges squeezed over at the table.
