Tuna, white bean & tomato salad
This is a no-cook lunch for two. Draining the tins and chopping the vegetables are the only substantial prep jobs.
Ingredients
- 1 × 400 g tin cannellini beans, drained and rinsed (about 240 g drained)
- 1 × 145 g tin tuna in spring water, drained
- 180 g cherry tomatoes, halved
- ½ cucumber, diced
- ¼ small red onion, very thinly sliced
- 50 g baby spinach or rocket
- 2 tbsp chopped flat-leaf parsley
- 1 tbsp extra-virgin olive oil
- 2 tbsp lemon juice
- 1 tsp Dijon mustard
- To taste freshly ground black pepper

Drain and rinse the cannellini beans and drain the tuna. Add the beans, tomatoes, cucumber, red onion, spinach and parsley to a large bowl.

Whisk the olive oil, lemon juice, Dijon mustard and black pepper in a small cup until combined.

Flake the tuna over the salad, pour over the dressing and toss gently so the tuna keeps some texture.

Divide between two bowls or lunch containers and serve straight away, or cover and keep chilled until lunchtime.
