Hummus & crunchy vegetable snack box

Creamy lemon-and-cumin hummus with crisp carrots, cucumber and peppers plus wholemeal pitta. It is a practical make-ahead snack or light mini-meal that fits the site's wider evidence-led eating pattern — not a treatment for fatty liver.

Why this combination

Vegetables + pulses + wholegrain crunch, without a “liver snack” label

Current MASLD guidance focuses on the overall dietary pattern rather than individual foods acting as treatments. Mediterranean-style patterns commonly include vegetables, legumes and mostly unsaturated fats. Chickpea hummus therefore works as an ordinary pulse-based dip, while the vegetable sticks add colour, crunch and variety.

The NHS also publishes hummus with vegetable sticks and wholemeal pitta as a practical recipe combination. That does not make hummus medically special; it simply confirms that this is a familiar, usable snack format rather than an invented “fatty liver food”.

Keep snacks optional. You do not need this — or any snack — simply because you have MASLD. If you have personalised advice for sodium, energy, potassium, fibre, diabetes medication, allergies, swallowing or another condition, follow that advice first.

The complete recipe

Hummus & crunchy vegetable snack box

Blend a simple chickpea hummus, then portion it with crisp vegetables and wholemeal pitta. Keeping the pitta dry until serving helps it stay firm.

Ingredients

  • 1 × 400 g tin chickpeas, drained and rinsed
  • 1 tbsp tahini
  • 1 tbsp olive oil
  • ½ lemon juice only
  • 1 small garlic clove, crushed
  • ½ tsp ground cumin
  • 2–4 tbsp cold water
  • 2 carrots, cut into sticks
  • ½ cucumber, cut into sticks
  • 1 red or yellow pepper, cut into strips
  • 2 small wholemeal pitta breads, cut into triangles

Method

  1. 1

Put the chickpeas, tahini, olive oil, lemon juice, garlic and cumin in a food processor or blender. Blend until roughly smooth.

  2. 2

Add the cold water one tablespoon at a time and blend again until the hummus is creamy but still thick enough for dipping.

  3. 3

Divide the hummus between four small lidded containers or compartments. Add the carrot, cucumber and pepper sticks alongside.

  4. 4

Add the wholemeal pitta triangles just before serving, or keep them in a separate dry compartment so they stay firm. Keep the boxes chilled until needed.

Shop-bought hummus is also fine. This page gives a complete homemade version because it is a recipe page, but using a convenient hummus does not make the snack “worse”. Check the label if salt, allergens or another nutrient matters for your individual advice.

Three ways to use it

Desk snack, packed box or light lunch extra

This is intentionally flexible. You can make one full box, split the components across a couple of snacks, or use the hummus as part of a larger meal.

01

Desk or travel box

Keep the hummus cold and the pitta separate until you are ready to eat. The vegetables provide the crunch without needing a packet snack.

02

Lunchbox component

Add the box beside soup, a salad or another light lunch when you want a little more substance and variety.

03

Shared plate

Put the hummus in the middle of a plate and arrange vegetables and pitta around it for a simple family or social snack.

Use it in a real week

Make one prep-friendly snack fit around the rest of your meals

Use the Recipe Finder when you want another plant-based snack, or add the ingredients to the Shopping List Builder. The overall week matters more than any single snack box.
