Smoky paprika roasted chickpeas
Dry the chickpeas thoroughly, season them lightly, then roast until browned and crisp. The lemon goes on after roasting so the chickpeas do not steam in the oven.
Ingredients
- 1 × 400 g tin chickpeas, drained and rinsed
- 2 tsp olive oil
- 1 tsp smoked paprika
- ½ tsp ground cumin
- ¼ tsp garlic granules
- To taste freshly ground black pepper
- 1 tsp finely grated lemon zest
- 1 tsp lemon juice
- Optional 1 tbsp chopped flat-leaf parsley

Heat the oven to 200°C fan / 220°C conventional. Drain and rinse the chickpeas, then dry them very thoroughly with a clean tea towel or kitchen paper.

Put the dry chickpeas in a bowl. Add the olive oil, smoked paprika, cumin, garlic granules and black pepper, then toss until evenly coated.

Spread the chickpeas in a single layer on a baking tray. Roast for 20–25 minutes, shaking the tray after about 12 minutes, until browned and crisp at the edges.

Let the chickpeas cool for 5 minutes, then add the lemon zest and lemon juice. Scatter with parsley if using and serve while still crisp.
