Bean, barley & vegetable soup
A warming four-serving soup that works well for lunch, batch cooking or planned leftovers. Use a reduced-salt stock and adjust the final thickness with water.
Ingredients
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 2 carrots, diced
- 2 celery sticks, sliced
- 1 small courgette, diced
- 2 garlic cloves, crushed
- 100 g pearl barley, rinsed
- 1 x 400 g tin chopped tomatoes
- 900 ml reduced-salt vegetable stock
- 1 x 400 g tin cannellini beans, drained and rinsed
- 1 teaspoon dried thyme
- 80 g baby spinach
- Freshly ground black pepper, to taste
- 1 tablespoon lemon juice, optional

Heat the olive oil in a large saucepan over medium heat. Add the onion, carrots and celery and cook for 6–8 minutes, stirring occasionally, until starting to soften.

Add the courgette, garlic and thyme and cook for 1 minute. Stir in the pearl barley, chopped tomatoes and vegetable stock, then bring to a gentle boil.

Reduce the heat, partially cover and simmer for 35–40 minutes, stirring occasionally, until the barley is tender. Add a splash of water if the soup becomes thicker than you like.

Stir in the cannellini beans and spinach and cook for another 4–5 minutes until the beans are hot and the spinach has wilted. Season with black pepper and lemon juice if using.
